A popular social media claim says that genuine olive oil should turn green and solidify like butter when placed in the fridge.
This is a myth.
In cold temperatures, olive oil may:
- become cloudy,
- thicken,
- partially solidify,
- or remain mostly liquid.
Its reaction depends on the olive variety, harvest time, region, natural wax content and fatty acid composition.
Lower-quality oils and blends may also thicken in the refrigerator. This means the fridge test cannot confirm authenticity or quality.
๐ข Green colour is not proof of quality either.
High-quality olive oil may be green, golden or yellow. Professional tasters often use dark-coloured glasses so that appearance does not influence their judgement.

Do not judge olive oil by whether it freezes. Judge it by its origin, freshness, aroma, flavour and laboratory results.
